Make New Friends...Today!


These cookies are an important part of our family culture. Literally. We have them AT LEAST once a month(read week) and I always try to have extra dough stashed away in the freezer for those last minute “emergencies”. These delights have also been aptly nicknamed the “make new friends” cookies. Whether entertaining or being guests in someone’s home - I like to whip up a batch of these babies and Voila! Suddenly, my flaws and shortcomings disappear and I become the life of the party!...Ok,not so much, AT ALL. These cookies really are crowd pleasers though. Try them out on your loved ones or just use their magical powers to make new friends.(results not typical. bake at your own risk.)

Chocolate Chip Heath Bit Cookies AKA Make New Friends Cookies
recipe makes approx. 3 dozen cookies

Ingredients:

2 1/4 Cup Flour
1 tsp. Baking Soda
1 Cup Unsalted Butter (softened)
3/4 Cup firmly packed Brown Sugar
1/4 Cup Sugar
1 small box Instant Vanilla Pudding
2 Eggs
1 Cup Heath Bits
1 Cup Chocolate Chips

Preheat your oven to 350

Directions:
1. In a large bowl or standing mixer bowl, Cream together Butter, Sugar & Brown Sugar,
until thoroughly combined.
2. Add in the Vanilla Pudding Powder and beat until combined.
3. Add each Egg separately. mixing between to get them good and mixed in.
4. Add the Flour & Baking Soda to the bowl and mix until completely combined.
5. Toss in your Heath Bits and Chocolate Chips and mix until evenly distributed.
6. Place rounded Tablespoons of Dough onto a baking sheet about a 1/2 inch apart.
7. Bake 11-14 minutes or until edges are golden.
*If cookies seem soft, still pull them out and let them cool/rest on the sheet for one minute. Then take them off the sheet and let them cool on a wire rack. This will give you the softness these cookies deserve.*

The variations with this recipe are endless! Swap in peanut butter chips for the Heath bits, use only Chocolate Chips, swap in Butterscotch Chips for the Heath Bits...I could go on and on!!!
